There are blackcurrants, redcurrants and gooseberries. The latter variety is larger and sweeter than the other ones. There are white and rosy gooseberries and this preserve is made with the latter.
The preserve has a strong translucent color with an acrid touch, characteristic of this fruit, and a fluid texture, with gooseberries and seeds to the mixture.
You can accompany it with a tea in a simple toast, or make a fresh summer dessert. If you fancy bittersweet meals, this is the ideal accompaniment for duck breast.
